Apple-Lemon Cupcakes



The sweet and sour flavors in these apple-lemon cupcakes go well together. You can make them quickly in an air fryer, and they're great for any time of the day.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup applesauce
  • 1 egg
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/2 cup diced apples
  • 1/4 cup powdered sugar for icing
  • 1 teaspoon lemon juice for icing

Instructions:

Preheat your air fryer to 320F 160C

In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt

In another bowl, combine melted butter, applesauce, egg, lemon zest, and 2 tablespoons of lemon juice

Pour the wet mixture into the dry ingredients and stir until just combined

Fold in the diced apples

Line cupcake molds with liners and fill each 3/4 full with the cupcake batter

Place the cupcakes in the air fryer basket, leaving some space between them

Cook at 320F 160C for 15-18 minutes or until a toothpick inserted into a cupcake comes out clean

While the cupcakes cool, mix powdered sugar and 1 teaspoon of lemon juice to make a simple icing

Drizzle the lemon icing over the cooled cupcakes
